The Oleificio Rossi di Brattiro preserves this tradition and turns it into a concrete experience to live. The journey begins among the olive trees, walking through the rows and observing the plant up close, the olive cycle and the harvesting techniques. You then enter the mill, the heart of the estate, where you witness the processing stages and understand what it means to produce quality: the pressing of the olives, cold extraction and the intense aromas that tell of the freshness of the raw material. The experience concludes with a guided tasting: you taste the freshly pressed oil, learn the essential criteria for recognising its aromas and sensations (fruity, bitter and spicy), and understand the difference between an artisan and industrial oil, with simple pairings like bread and oil that bring out every nuance.
